Every food establishment is required to have a food manager who has been trained in food safety and has passed a test. If your establishment has four or more employees then a certified food protection manager is required to be on site during the operation.  

If you do not have the time to go somewhere and take a class then, as a certified proctor, we can come to your place of business and offer a food manager certification class and/or administer the test.

Employee training is a requirement by the Department of Business and Professional Regulations Division of Hotels and Restaurants. Every employee within 90 days of hire is required to complete an employee training.

If you are selling ice to the public then you are required to test your ice by an approved laboratory once every 3 months.

Is your facility compliant with the Food Safety Modernization Act (FSMA) preventive controls regulation?  

 

Generally, domestic and foreign food facilities must comply with the requirements for risk-based preventive controls mandated by the FDA Food Safety Modernization Act (FSMA) as well as the modernized Current Good Manufacturing Practices (CGMPs) of this rule (unless an exemption applies).

This rule, which became final in September 2015, requires food facilities to have a food safety plan in place that includes an analysis of hazards and risk-based preventive controls to minimize or prevent the identified hazards.

As a Preventive Controls Qualified Individual (PCQI) we can write your food safety plan to be in compliance with the FSMA.

Environmental Testing

One of the proactive approach to food safety is to have an environmental monitoring program.  In the past manufacturing and processing plants focused on finished product testing.  Now the focus has shifted to identify the source of entry and harborage areas of the pathogen.  Once found you can conduct an investigation to find out how the organism got there and destroy it.

Our environmental monitoring programs include swabbing and testing for Listeria, total coliforms, E. coli O157:H7, pathogen confirmation, etc.
